A well-loved Â鶹´«Ã½Ó³»fine dining restaurant revealed in early March 2020 they are closing their door after an incredible 35-year-run in the city's Kitsilano neighbourhood.
, named for chef-owner John Bishop, 75, had planned to close its doors August 1, however COVID-19 restaurant shutdowns cut away at their farewell season.
Now comes word Bishop's has planned to remain open until the end of the year.
Initially, Bishop had envisioned a close-out phase with guest chefs and special events, and plenty of chances for fans to have their last suppers. The goal was to "have absolutely no regrets" when August 1 rolled around.
“Now that we’re open again, albeit with social distancing, we want to give our customers the chance to join us and say good-bye," said Bishop. "In fact, our customers have said the new social distancing with fewer tables is more romantic with just 20 guests rather than our usual 40. Who knew there could be a silver lining to a pandemic, but there you go, love always seems to find a way.”
Launched in 1985, Bishop's has been a staple in the city's farm-to-table movement and elegant dining.
Bishop says he's opting to shutter after a "terrific run" in order to spend more time with his family and to work on a book.
During Bishop's 35-year tenure, the restaurant has seen many chefs who have gone on to great success be a part of the team, including Iron Chef Canada and Â鶹´«Ã½Ó³»celeb chef Rob Feenie (currently heading up things at Cactus Club),
Industry peers have long lauded Bishop for his food and hospitality. Among those is Vancouver's Vikram Vij, who said Bishop "has a subtle way of making every customer feel like they're the most important person in the room."
Bishop's now offers two 20-person sittings, open Tuesday to Saturday 5:30 to closing. Take-out is also available for those who are more comfortable enjoying Bishop’s at Home.
