Remember the trip I took you on to in Whistler not long ago? While I was up there I was fortunate to get a tour of the small batch facility where Norman Strim and his team brew up which you may have seen at some of the local Â鶹´«Ã½Ó³»farmers markets recently.
The recipe is simple: six year aged 100% balsamic vinegar from Modena Italy infused with fresh fruits and herbs... slowly. The result is a damned fine balsamic reduction which currently comes in three different varieties. The amount of time, care and thought that is put into each bottle of this stuff is amazing and Norman explained to me in great detail the process in which it's made, the trips to Italy sourcing the perfect 6 year old vinegar, and how they perfected the perfect recipe. But instead of taking you through the entire process that he and his team go through I decided to condense the bottling phase into a 12 second long video. Enjoy!
