Vancouver's acclaimed , a French patisserie, chocolaterie, and café, has revealed its opening a third location - this time across the inlet on the North Shore.
Thierry is launching its newest venture at 1343 Bellevue Avenue at Ambleside in West Vancouver, with plans to have the doors open sometime in 2022.
Known for beautiful viennoiserie and petit fours, macarons, chocolates, cakes and tarts, and stunning seasonal items, Thierry's café is also a great spot to sit down and enjoy eats like quiche, sandwiches, and soup, as well as sip on a hot or cold beverage.
The elegant bakeshop gets its name from its founder and head pastry chef and chocolatier Thierry Busset. Chef Gordon Ramsay, a former colleague, called Busset “one of the finest pastry chefs in the world.”
Chef Busset came on board with Toptable, which operates the two existing Thierry locations in Vancouver, to lead the pastry and baking programs at Cin Cin and the now-defunct West; ultimately the restaurant group gave Busset his own space, and Thierry on Alberni in downtown was born.
When West shuttered in late 2019, Toptable sweetened the sour news when they announced the plan to add the second Thierry in Mount Pleasant, at 265 East 10th Avenue. That location was finally able to get up and running about a year later, thanks to pandemic-era stalls.
