For decades, Yaletown corner has been where first dates turned into anniversaries and milestones were marked over briny oysters and Pacific Northwest salmon. And while the spirit hasn’t changed, the experience has only deepened—refined in all the right places.

It’s a legacy that continues to shine: recently voted a Âé¶¹´«Ã½Ó³»­is Awesome Stars winner for Fine Dining, Blue Water Cafe has once again been recognized for its commitment to exceptional cuisine, warm hospitality and sustainable practices.

A leader in sustainable seafood

When it comes to doing right by the ocean, Blue Water Cafe has always been ahead of the tide.

Much of that credit goes to Executive Chef Frank Pabst, whose culinary expertise and visionary leadership have helped define the restaurant’s identity. Since joining the restaurant in 2003, Chef Pabst has championed sustainable practices, creating menus that reflect a conscious, considered approach to ocean-friendly cooking. As one of the early adopters of the Âé¶¹´«Ã½Ó³»­Aquarium’s Ocean Wise seafood program, Blue Water Cafe has long prioritized responsible sourcing as a cornerstone of its culinary philosophy.

Chef Pabst’s annual Unsung Heroes menu exemplifies this ethos. By showcasing underutilized and often overlooked seafood species, the initiative encourages diners to broaden their palates while helping to reduce pressure on overfished stocks. Partial proceeds from this menu are donated to Ocean Wise, reinforcing the restaurant’s ongoing commitment to marine conservation.

A menu that celebrates the ocean

From sea to serving, every dish at Blue Water Cafe tells a deliciously conscious story. But sustainability is just one part of what sets this Yaletown staple apart. The food itself — vibrant, seasonally inspired and artfully composed — speaks for itself. Under the direction of Wine Director Calen Macdonald, Blue Water Cafe’s wine program is guided by a philosophy of — balancing iconic benchmarks of quality with exceptional, character-driven bottles. The result is a comprehensive list of nearly 1,500 labels and a cellar of over 8,000 bottles, spanning the globe from niche producers to legendary estates.

This thoughtful collection sets the tone for Blue Water Cafe’s private dining offerings, where guests can enjoy an elevated, personalized experience. Located within their wine cellar, the private rooms offer an intimate, exclusive atmosphere perfect for any occasion.
