With the leadership of passionate ocean ambassadors, the Aquarium has been able to turn the tides to help conserve our oceans and the aquatic life that depend on them. In this series we introduce you to some of these Ocean Wise ambassadors in Vancouver.

Why is Ocean Wise important to you?
We are coming to learn that the resources around us are not indefinite. Ocean Wise makes sure we save the bounty of our oceans for the generations to come and keep the world’s ecosystem cycling properly.
What is your favourite Ocean Wise seafood and how do you like it prepared?
Humboldt Squid. I love to pan sear the squid as you would a scallop and slice it thin. The squid really takes flavours well, so I like to pair it will strong counterparts like Chorizo sausage or fried onions.
When did you discover your love of food?
Growing up I had a couple of brothers as my best friends. Their father owned and ran Japanese restaurant in Kits, and it was always amazing to eat his food and see his care for product.
What would you consider to be your favourite kitchen gadget?
Thermomix. Being able to make a curd or custard on the fly, or even the smoothest puree imagineable, is a huge bonus in any kitchen.
Which ingredient could you not live without?
Vinegars of all types.
Sweet or savoury?
Sweet.
What’s the most amazing dish you’ve ever tasted?
English pea and black truffle veloute at Trois Gros in Roane, France. Clean, simple, textures, flavours…everything was there.
Which establishment do you most frequent in Vancouver?
Sawasdee Thai Restaurant on Main Street.
If you could turn back time, which unsustainable seafood choice would you bring back from the brink?
Atlantic Cod, not necessarily because I loved it, but because if we knew what we know now 20 years ago, fisherman and families on the east coast would still have jobs.
What would be your perfect last supper?
Authentic Thai Massaman curry with potatoes and Jasmine rice.
With whom would you enjoy it?
My family.
