Â鶹´«Ã½Ó³»­ is a proud sponsor of , created in 2005 to address overfishing, the single biggest threat facing our oceans today. What started as a local conservation initiative has grown into a nation-wide program with over 480 partners spanning coast to coast.

With the leadership of passionate ocean ambassadors, the Aquarium has been able to turn the tides to help conserve our oceans and the aquatic life that depend on them. In this series we introduce you to some of these Ocean Wise ambassadors in Vancouver.

Why is Ocean Wise important to you?

Simply because I want the next generation to be able to enjoy fish and the ocean as a whole. At present, 85% of the planet’s fisheries are being fished at or above the maximum sustainable limit. Organizations such as Ocean Wise do an amazing job educating people on the importance of conserving our oceans for the future.

What is your favorite Ocean Wise seafood and how do you like it prepared?

I think lingcod is a great tasting sustainable fish. It’s still very much underrated but I would pick it over halibut any day. Simply pan sear it and serve it with butter, lemon and capers. (Or as an Englishman it’s a great fish for fish & chips.)

When did you discover your love of food?

I was a lucky child, my mother is a great cook and there was always delicious food to eat.

What would you consider to be your favorite kitchen gadget?

Definitely my Kitchen Aid stand mixer — it can be used for everything from cakes and breads to grinding or making sausages or rolling pasta.

Which ingredient could you not live without?

Bacon!

Sweet or savoury?

Sweet.

What’s the most amazing dish you’ve ever tasted?

Any of the 13 that I received at The Fat Duck last September.

Which establishment do you most frequent in Vancouver?

Peaceful Noodle or Hawkers Delight.

If you could turn back time, which unsustainable seafood choice would you bring back from the brink?

I would have to say the blue fin tuna.

What would be your perfect last supper?

BBQ, lots of beer and something sweet.

With whom would you enjoy it?

Rowan Atkinson, Anthony Bourdain and the dragon girl from Game Of Thrones.
