A veteran team of Â鶹´«Ã½Ó³»restaurant folks have joined forces to open an exciting new modern Peruvian restaurant in Mount Pleasant.
Called , the restaurant is moving in at 3475 Main St, taking over for the longstanding diner operation Slickity Jim's, which shuttered earlier this spring.
The culinary soul of the operation is Chef Ricardo Valverde (Ancora, Blue Water) who is partnering up with James Reynolds (La Buca, Blue Water Cafe, La Regalade) as General Manager, award-winning bartender Max Curzon-Price (Botanist, Clarendon Cocktail Cellar UK), and tech entrepreneur Felix Ng as Director of Operations for Suyo.
Suyo takes its name from a South American Indigenous word that means "homeland," and honours Valverde's family and their journey to Canada to build a new life.
On the menu will be popular Peruvian eats, including ceviches, tiraditos (seafood crudo), causas (layered potato casserole), and anticuchos (grilled beef heart kebabs). Diners can expect to find many seafood-centric dishes as well as ancient Inca dishes. Thanks to a tradition of melding Peruvian flavours with global influences, Suyo will also offer a taste of Chifa (Chinese-Peruvian) and Nikkei (Japanese-Peruvian) fare, along with items drawing inspiration from Italy and Spain.
As for libations, Suyo's reps say: "Reynolds and Curzon-Price are building a beverage program to equal the innovative cuisine, with wines from Peru, Chile, Argentina and Uruguay; and plans to feature all eight varieties of Pisco for the bespoke cocktail list, which will include the classic pisco sour naturally."
"It will be a unique culinary experience that you won’t find anywhere else," remarks Valverde in a media release.
