Vancouver's appetite for upscale sushi bar dining seems unwavering, as yet another concept prepares to launch in the city.
Sushi Huynh describes itself as a "high-end authentic sushi omakase restaurant that operates by reservation only," according to a job listing posted online by the new business.
The operation will be so intimate that Sushi Hyun will only be taking "fewer than 10 guests at a time."
More specifically, Sushi Hyun's sparsely populated Instagram account page () indicates the forthcoming restaurant intends to have room for just six guests at a time.
The plan is to have one seating each at lunch and dinner to start and then adding a second seating option.
The new upscale sushi bar will open soon at 795 Jervis St. The address was most recently a location of Ssong's Hot Dogs, an outpost of the South Korean franchise that lasted about a year in the space before quietly exiting.
Previously, 795 Jervis St has been home to several restaurants, including Koyuki Sapporo Ramen, Argan Bistro, and Le Bretagne Creperie.
A business licence has been issued for Sushi Hyun, and, in its job listing, the restaurant says it hopes to be open as July ends or August begins. No date has been announced yet.
Currently, Sushi Hyun appears to only have an Instagram page as its online presence.
"At Sushi Hyun, we believe that dining is more than just enjoying food – it‘s an experience," describes operators on social media, adding that the name "Hyun" means "brightness and positivity."
Menu details are not available, however, Sushi Hyun indicates in a job listing that, while they hope to employ staff who "are dedicated to customer service and have a passion for wine, sake, and sushi," the restaurant will not serve red wine.
