You've probably seen them on Instagram if you're a food fan: Impossibly thick, jiggly, pale yellow, and super fluffy Japanese soufflé pancakes. This seductive blend of egg, butter, and air make these next-level pancakes bait for both food photogs and hungry bellies, and now 鶹ýӳis about to have its very own restaurant that is solely focused on Japanese soufflé pancakes.
Fufú Café is prepping to open soon at 1266 West Broadway. The project of locals and longtime friends Vicki Chen and Sienna Gan, Fufú is all about those soufflé pancakes, in both savoury and sweet versions.
Clocking in at just over 1,000 square feet, this new cafe will have seating for 20, and will boast a "whimsical" design by co-owner Chen, who is an interior designer.
Chen says she and Gan "fell in love with the soufflé pancake on a visit to Japan and couldn’t find anything like it in Vancouver," so the idea for Fufú Café was born.
Their soufflé pancakes will be made-to-order, ensuring each pancake is cooked properly and enjoyed immediately (well, after a few moments of vital Instagramming).
On the sweet side, Fufú Café will have options like their Classic (butter, maple syrup, “Fufú” icing sugar or sea salt mascarpone cheese whipped cream); Matcha Mochi (shiratamako balls, housemade matcha sauce, matcha whipping cream, double chocolate raspberry ice cream, white chocolate flakes, matcha flakes); Mixed Fresh Fruit; and Earl Grey with Tapioca Pearls.
The café will have savoury options for the weekends only to start, and they will include combos like smoked salmon and avocado and an Eggs Benedict version. Additionally, Fufú will have seasonal and special flavours available.
To go with your soufflé pancakes, Fufú will have coffee and tea service, fresh fruit sodas, cheese foam fruit tea, and milk teas.
Fufú Café is aiming to have their grand opening in early September, and they will be open seven days a week from 11 a.m. to 10 p.m. They are located at 1266 West Broadway in Vancouver.
