Plant-focused restaurant closing after just over a year in New Westminster

The counter-serve spot took root just over a year ago at a popular waterfront destination

A plant-focused restaurant that took root just over a year ago has revealed they're closing up shop in the wake of the COVID-19 crisis.

, a casual counter-serve vegetarian and vegan eatery located inside the River Market in New Westminster will close their doors September 6.

The restaurant had re-opened in June for dine-in service, after closing up due to COVID-19. Owners say the effects of COVID on the business guided the decision to shutter permanently.

“It was a difficult decision to close Amaranthus, but a necessary one given the circumstances,” says Alejandro Diaz, owner of Amaranthus.

“We are a vegetable-forward, feel-good restaurant built from the root up, for our beloved community. Our mission is to create honest food that highlights great ingredients in a welcoming space, and we cannot wait for you to enjoy it," described Diaz ahead of the opening in 2019.

Diaz, along with chef Sam Fabbro, are behind nearby's popular El Santo, a contemporary Mexican restaurant. According to a press release, Amaranthus' staff have been moved to positions at El Santo.

The day prior to announcing Amaranthus' closure, Diaz and Fabbro announced they are opening Nox, a modern Italian restaurant situated at the Cardero, a 26-storey mixed-use building in Vancouver's Coal Harbour. Nox is projected to be open by the end of this year.
