There’s a new vegan sandwich to try in Vancouver, but the “crunchy, refreshing, flavoursome” meal will only be available for a limited time.
The chefs at 鶹ýӳrestaurant Popina Canteen have collaborated with Canadian musician Jann Arden to recreate the star’s favourite sandwich to help raise funds for the Canadian Cancer Society.
The result is a veggie-forward toasted focaccia that will be available at the Granville Island eatery this week.
The award-winning singer-songwriter says the recipe is a personal favourite that she makes twice a week at home. She described it as “crunchy, refreshing and really flavourful.”
The sandwich starts with two puffy squares of focaccia covered with a generous spreading of hummus, layered with thin slices of cucumber, artichoke, hearty smoked tofu, red onion and tomato. The sandwich is then toasted and served warm, and is sure to appeal to omnivores and vegans alike.
The fundraising campaign for the Canadian Cancer Society began last fall — with all proceeds from a number of sandwich collaborations going towards the charity.
Opened in the summer of 2018, Popina Canteen is the collaboration of four of Vancouver’s top chef-owners: Angus An, Robert Belcham, Hamid Salimian, and Joël Watanabe.
The dock-side restaurant offers fast food made better, with high-quality ingredients from local market stalls and fishing nets, transformed into crave-worthy burgers, sandwiches, salads, cocktails and more.
Belcham met Arden through mutual connections, and knowing that cancer had touched both their lives, as it has the lives of so many Canadians, the collaboration seemed like an obvious fit.
