Former Lumière chef de cuisine Dale Mackay has wasted no time finding his feet after the closure of the iconic West Broadway restaurant. WE can confirm the two-time Gold Medal Plates silver medalist is opening a new restaurant in the former Corner Suite Bistro De Luxe location at 850 Thurlow Street. Called Ensemble, it could open as soon as May. Former DB Bistro chef Nathan Guggenheimer is off to New York City to continue work for Daniel Bouluds Dinex company. Its not yet certain at which Dinex restaurant hell be hanging his toque, but we know that it will be the better for it.
