After the crowd at ensembleTap applauded his Top Chef Canada début on Mar. 12, Trevor Bird announced that he and his partners new farm-to-table restaurant will be named Fable. They hope to have it opened on W. 4th in April. As much as everyone will be thrilled about the news, Fable is taking over the space currently occupied by Refuel. That restaurant is closing its doors on March 24 so owner Robert Belcham can concentrate on his exciting new venture, Fat Dragon.
