Describe your cooking and/or the theme of your restaurant: Its all about integrity; we use local, seasonal ingredients and perform nose-to-tail butchery.

We might also find you dining out at... Suika, La Quercia and Maenam, because I love variety and I can order multiple dishes that are all great for sharing.

Your dream dinner date (spouses and family dont count): The Beastie Boys.

Last nights dinner: I ate fried chicken and salad for the staff meal with my kitchen crew.

If you had a date with the electric chair, your last meal order would be... anything pickled, local tuna and scallops, bacon and bubbles.

Youd gag if you ate... Overripe, bruised bananas.

Youd be happiest at Happy Hour with... Magners Cider or bubbles and St. Germain.

Secret treats: Cheap ice cream sandwiches (80 cents or less), sour cream and onion ripple chips (has to be rippled).

Youd take a long flight in economy class for that one meal in... New York City at the Spotted Pig, Burger Joint, Lupa or Prune.

Culinary confession: I was so nervous I cut both of my hands in culinary school during a black box competition. I presented my plates with two very bloody, gloved hands.

Menu suggestion for a hassle-free, sit-down dinner party for six: This time of year, just throw the spot prawns on the barbie.

Five must-have ingredients in your kitchen: Ketchup, kosher salt, gin, Valentina Mexican hot sauce, lemon.
